Slow Cooker Bone Broth Chicken Curry

This slow cooker bone broth chicken curry is rich, creamy, and packed with flavor. A hearty, comforting meal perfect for busy days.

Ingredients:


  • 1.5 lbs boneless, skinless chicken thighs (cubed)

  • 1 cup chicken bone broth

  • 1 can (400ml) coconut milk

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 3 tbsp curry powder (or paste)

  • 1 tsp ground turmeric

  • 1 tbsp olive oil or coconut oil

  • 1 large tomato, chopped (or 1/2 cup canned diced tomatoes)

  • 1 red bell pepper, chopped

  • 1 small potato, peeled and cubed

  • 1 tbsp lemon juice

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • Fresh cilantro for garnish

  • Cooked rice or naan (for serving)

Directions:


  1. Sauté Aromatics: In a pan, heat olive oil over medium heat. Add onions, garlic, and ginger. Cook for 2-3 minutes until softened. Stir in curry powder and turmeric, cooking for another minute to release the flavors.


  2. Prepare the Slow Cooker: Transfer the sautéed mixture to your slow cooker. Add the cubed chicken, chicken bone broth, coconut milk, tomatoes, bell pepper, and potatoes. Stir everything together.


  3. Slow Cook:

    • Low: 6-7 hours

    • High: 3-4 hours

  4. Finish: Stir in lemon juice before serving. Taste and adjust seasoning if needed.


  5. Serve: Garnish with fresh cilantro and serve over warm rice or with naan.
