Slow Cooker Bone Broth Chicken Curry
This slow cooker bone broth chicken curry is rich, creamy, and packed with flavor. A hearty, comforting meal perfect for busy days.
Ingredients:
1.5 lbs boneless, skinless chicken thighs (cubed)
1 cup chicken bone broth
1 can (400ml) coconut milk
1 large onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
3 tbsp curry powder (or paste)
1 tsp ground turmeric
1 tbsp olive oil or coconut oil
1 large tomato, chopped (or 1/2 cup canned diced tomatoes)
1 red bell pepper, chopped
1 small potato, peeled and cubed
1 tbsp lemon juice
1 tsp salt (adjust to taste)
½ tsp black pepper
Fresh cilantro for garnish
Cooked rice or naan (for serving)
Directions:
Sauté Aromatics: In a pan, heat olive oil over medium heat. Add onions, garlic, and ginger. Cook for 2-3 minutes until softened. Stir in curry powder and turmeric, cooking for another minute to release the flavors.
Prepare the Slow Cooker: Transfer the sautéed mixture to your slow cooker. Add the cubed chicken, chicken bone broth, coconut milk, tomatoes, bell pepper, and potatoes. Stir everything together.
Slow Cook:
Low: 6-7 hours
High: 3-4 hours
Finish: Stir in lemon juice before serving. Taste and adjust seasoning if needed.
Serve: Garnish with fresh cilantro and serve over warm rice or with naan.
