Savory Bone Broth Risotto with Parmesan & Herbs

This savory bone broth risotto is creamy, flavorful, and infused with herbs and Parmesan. A comforting dish that's perfect as a main or side.

Ingredients:

  • 1 ½ cups Arborio rice


  • 4 cups chicken bone broth (warm)


  • 2 tbsp olive oil or butter


  • 1 small onion, finely chopped


  • 2 cloves garlic, minced


  • ½ cup dry white wine (optional)


  • ¾ cup grated Parmesan cheese, plus extra for garnish


  • 2 tbsp fresh parsley, chopped


  • 1 tsp fresh thyme leaves


  • Salt and pepper to taste


  • Optional: 1 tbsp bone broth protein powder for extra nutrition

Directions:


  • Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened (about 3-4 minutes).


  • Toast the Rice: Stir in the Arborio rice and cook for 2 minutes until slightly translucent. Add the white wine and stir until absorbed.


  • Cook with Bone Broth: Gradually add chicken bone broth, one cup at a time, stirring frequently. Wait until each cup is absorbed before adding the next. Continue until rice is creamy and tender (about 20 minutes).


  • Finish the Risotto: Remove from heat. Stir in Parmesan cheese, parsley, thyme, salt, and pepper.


  • Serve: Plate the risotto and top with extra Parmesan and herbs.
