Savory Bone Broth Risotto with Parmesan & Herbs
This savory bone broth risotto is creamy, flavorful, and infused with herbs and Parmesan. A comforting dish that's perfect as a main or side.
Ingredients:
1 ½ cups Arborio rice
4 cups chicken bone broth (warm)
2 tbsp olive oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
½ cup dry white wine (optional)
¾ cup grated Parmesan cheese, plus extra for garnish
2 tbsp fresh parsley, chopped
1 tsp fresh thyme leaves
Salt and pepper to taste
Optional: 1 tbsp bone broth protein powder for extra nutrition
Directions:
Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened (about 3-4 minutes).
Toast the Rice: Stir in the Arborio rice and cook for 2 minutes until slightly translucent. Add the white wine and stir until absorbed.
Cook with Bone Broth: Gradually add chicken bone broth, one cup at a time, stirring frequently. Wait until each cup is absorbed before adding the next. Continue until rice is creamy and tender (about 20 minutes).
Finish the Risotto: Remove from heat. Stir in Parmesan cheese, parsley, thyme, salt, and pepper.
Serve: Plate the risotto and top with extra Parmesan and herbs.
